Eggnog is now a refrigerator staple, and cookies are being baked by the dozen in our household. I wanted to use the copious amounts of eggnog we had on hand for a baking recipe this year. I decided upon these Gingersnap Sandwich Cookies; they are easy to make, and differ from the traditional holiday fare!
I love baking around the holidays; the oven adds a little extra warmth to our house, and the smell of cookies in the air brings back wonderful memories for me. I love to create new cookie recipes when I can each holiday, while also baking the traditional cookies from my childhood. Christmas is a time for traditions; however, sometimes its nice to switch things up!
This sandwich cookie is a great idea for those that love eggnog and want to create something a little different this holiday season! I guarantee the whole family will enjoy these, and so will your friends at your next holiday cookie swap!
This gingersnap cookie is adapted from from Grandma’s Gingersnap Cookies at Allrecipes.com.
- 1/2cup buttersoftened
- 1 1/2cups powdered sugar
- 3-4tablespoons eggnog
- Preheat oven to 350 degrees.
- In a bowl, whisk together flour, ground ginger, baking soda, cinnamon, and salt.
- In a stand mixer, beat softened butter and cane sugar until fluffy. With the mixer running on low, add the egg and molasses.
- Gradually add your dry ingredients, and beat until completely blended, scraping the bowl as you go.
- Roll cookie dough into 1 inch balls, then roll them through the turbinado sugar. Place them 1-2 inches apart on an ungreased baking sheet.
- Bake cookies for 12 minutes. Let them cool completely on a wire rack.
- While cookies are cooling, beat together butter and powdered sugar until creamy. Gradually add eggnog 1 tablespoon at a time until frosting reaches desired thickness.
- Once cookies are completely cooled, spread or pipe frosting onto one cookie and place the other on top.
