Gingersnap Sandwich Cookies with Eggnog Frosting

Holiday baking season is in full swing! Try this unique cookie recipe for your next holiday party – Gingersnap Sandwich Cookies with Eggnog Frosting! A perfect gift for someone special, or a great idea to bring to your Christmas cookie swap!

Eggnog is now a refrigerator staple, and cookies are being baked by the dozen in our household. I wanted to use the copious amounts of eggnog we had on hand for a baking recipe this year. I decided upon these Gingersnap Sandwich Cookies; they are easy to make, and differ from the traditional holiday fare!

I love baking around the holidays; the oven adds a little extra warmth to our house, and the smell of cookies in the air brings back wonderful memories for me.  I love to create new cookie recipes when I can each holiday, while also baking the traditional cookies from my childhood. Christmas is a time for traditions; however, sometimes its nice to switch things up!

This sandwich cookie is a great idea for those that love eggnog and want to create something a little different this holiday season! I guarantee the whole family will enjoy these, and so will your friends at your next holiday cookie swap!

This gingersnap cookie is adapted from from Grandma’s Gingersnap Cookies at Allrecipes.com.
